ingredients

1/2 cup onion, finely chopped
1/2 cup carrots, finely chopped
3 cups mushrooms, cubed
2 tbsp butter
2 tbsp oil
3 potatoes, peeled, cubed and boiled
2 cup broth or water
2 cups of warm milk
4 tbsp parsley, finely chopped
1 cup croutons

method

Melt the butter in a pan and add the oil.
Sautee the onions, carrots and mushrooms for 10 minutes.
Let them cool for 5 minutes and then pour the vegetable mix in a food processor.
Add the potatoes and process to obtain a puree.

Pour the puree in a sauce pan, add the water/broth and simmer for 10-15 minutes.
Add the milk, salt and pepper and heat without boiling.

Sprinkle fresh parsley and croutons when serving.
